Harvest: By hand

Area under Vine: 12 hectares

Total production of the farm: 40,000 bottles

Farming method: Organic

Fermentation and Vinification: Both wines are fermented using only wild yeasts.  After soft direct pressing the juice is separated from the skins and fermented in temperature controlled stainless steel tanks, with a final brief stay on the lees. For the Bolla Rosa, the second fermentation occurs in the autoclave lasting 4 months.  The Anima Rosa is bottled 3 - 4 months after fermentation.
