Farming method: Sustainable

Fermentation and Vinification: All of the wines are fermented using selected and natural yeasts. For the white wines, after de-stemming the juice is cold-soaked with the skins at 10°C, about 4 hours for the Friulano and 2 hours for the Pinot Grigio.   After racking the white wines remain on the fine lees for about 6 months and are bottled in mid-March following the harvest.  The juice for the Cabernet Franc is fermented on the skins for about 10 days and is then matured in stainless steel and bottled in July after the harvest.
