The farm lies adjacent to the Montosoli hill, facing south toward the hilltop city of Montalcino. Upon retiring from their corporate lives in Siena, husband and wife, Anna Toti and Lodovico Ginotti, decided to move to the farm of Lodovico’s ancestors and begin producing wine. The production is tiny and tended with the utmost care. Although not certified organic, no chemical fertilizers are used.

Farming method: Sustainable
Fermentation and Vinification: The juice is fermented using only wild yeasts and macerates on the skins in cement tanks for several weeks until fermentation is complete. The wine is aged in both 3000-liter Slavonian oak barrels and smaller barrique for 4.5 years before blending and bottling. The wine is bottled unfiltered.
