Montefalco Sagrantino DOCG - Annual Production: 8,000 bottles
Located just a couple of kilometers from the center of Montefalco, Le Cimate is owned by the Bartoloni family and is now operated by son Paolo. The family has been farming since 1800 and began growing grapes in 1954. Like many small growers, the fruit was sold to other producers until 2007 when the family began producing their own wine. Finally, in 2011 they began bottling wine under their own label. Paolo and his family tend to every aspect of production, living and working alongside the cantina and vineyards.

Fermentation and Vinification: For the Montefalco Rosso, the different varieties are harvested and vinified separately. The juice macerates on the skins for 15-20 days in stainless steel tanks with 3 pump-overs every day. The wine is refined for 12/18months in barriques and then blended and bottled for at least 6 months prior to release.
For the Montefalco Sagrantino, the juice macerates on the skins for 25 days in stainless steel tanks with 3 pump-overs each day. The wine is refined for a total of 36 months with 24 months in barriques and at least 12 month in bottle.
