For four generations the Gangemi family has dedicated itself to the viticulture and enhancement of the Sicilian autochthonous vines, especially from the Etna area. Fermentation and Vinification: Etna Rosso: Cold soak for 48 hours, skin maceration for 8 - 10 days punched down regularly, 12 - 18 months in 30hl oak and chestnut barrels followed by further time in stainless steel prior to bottling. Nero d’Avola and Nerelllo Mascalese: Cold soak for 48 hours, skin maceration for 8 - 10 days punched down regularly, matured on the lees for several months in stainless steel then bottled. Grillo: Cold soak for a few hours, matured on the lees in stainless steel for several months then bottled.
